In Season July - Cherries

Feeding your little cherubs cherries this month in the form of this delicious cherry compote poured over good quality vanilla ice-cream or Greek yogurt will not only boost their intake of vital immune boosting anti-oxidants, vitamin c and calcium but it will delight their taste buds too!
Melt 100g of unsalted butter in a pan. Add a bay leaf, reduce the heat, add 70g of light brown sugar and dissolve it completely before adding 2 tablespoons of lemon juice and 150ml or orange juice. Add a pinch of salt, stir and cook until the sauce has reduced by half. Add 500g of sweet, desert cherries that have been stoned and leave on the heat until the cherries are warmed through.
