Recipe of the Week - Butter Bean and Pesto Soup

If you're a fan of soups, then give this one a go. Sounds weird but unbelievably tasty and easy to make.
Time to table – 20 minutes. Serves 4
- 2 tins butter beans, rinsed and drained
- 4 tablespoons of green pesto (yes)
- 2 tablespoons of sundried tomato paste!
- 1 pint vegetable stock
Put the lot in a big pan, bring to the boil and simmer for 15-20 mins until the butter beans soften. Grab a hand held food processor and whizz to a smooth soup.
Delicious, full of protein and the good oils.....
