Cheesy Baked Ham 'n' Eggs

Want to cook something a little different for your children's supper this week but can't bear the thought of toiling away in the kitchen only to be told by your brood they don't like it? Then try this little dish. Not only is it packed full of protein, iron and energy but it tastes great too making it a guaranteed winner with the whole family.

 

25g/1 oz butter
1 tablespoon of olive oil
1 large onion, peeled and finely chopped
350g /12 oz cooked (preferably organic) of the bone ham, diced
450g / 1 lb new potatoes, cooked and diced
115g/ 4oz cheddar cheese, grated
6 organic, omega three rich eggs
30ml/ 2 tbsp tomato ketchup
15ml/1 tbsp Worcestershire sauce
Chopped fresh chives to serve

Pre-heat the oven to 160C/325F/Gas mark 3.

Melt half the butter in a frying pan. Sauté the finely chopped onion until soft, stirring occasionally then tip it into a bowl and stir in the ham, potatoes, cheese, tomato ketchup and Worcestershire sauce. Spread the mixture in a buttered baking dish in a layer about 2.5cm deep and bake for 10 minutes.

Remove the dish from the oven, make six small hollow in the mixture then break each egg in turn into a bowl or saucer and then pour each egg into it's own hollow. Drizzle olive oil lightly across the eggs then bake for a further 15 - 20 minutes until the eggs are set. Garnish with chives and serve.

N.B. Baked beans or steamed broccoli make a great accompaniment to this dish. Alternatively, to make it even richer in iron, layer the baking dish with lots of fresh spinach leaves first before adding the ham and potato mix and cook as above.
