Easter Lamb and Watercress Burgers

Want An Easy Easter? Forget labouring over a hot stove cooking a traditional roast lamb lunch. Instead, simply step outdoors, strike up the BBQ and celebrate the arrival of spring with these melt in your mouth lamb and fresh watercress burgers.

Lamb and watercress are both at their very best this time of year and this recipe combines them in a healthy, nutritious way the whole family will love.

Preparation time: 15minutes
Cooking time: 8-10minutes
Ingredients:

400g lean, organic lamb mince
1 small onion, chopped
1 garlic clove, crushed
1 tsp ground cumin
50g watercress, finely chopped
1 tbsp olive oil

  • Method:
    Place the mince, onion, watercress and cumin in a large bowl with a pinch of salt and freshly ground black pepper. Mix together thoroughly.
  • Divide the mixture into 8 then use wet hands to shape each piece into a small thin pattie. (Let this kid's do this bit - they'll love it!)
  • Cook the burgers under a hot grill or over hot coals of a BBQ for 8 - 10 minutes turning once until they are cooked through with no sign of pink juices. Serve in a pitta or flat bread with a dollop of cr√®me fraiche mixed with equal amounts of BBQ sauce or just as they are accompanied by couscous and roasted vegetables.
