Fish for Dinner

Trout is a great source of those brain enhancing, immune boosting, heart protecting omega three fatty acids and this pate is one way to ensure your kids eat it. Spread on soft bread rolls for super quick sandwiches, fingers of toast for supper or put some in an egg cup or brulee dish and serve with vegetable crudités for a delicious, nutritious snack.

SMOKED TROUT PATE
Serves 4-6 (250g)
Preparation time

150g smoked trout fillets
100g cream cheese
1-2 tbsp lemon juice
freshly ground black pepper (optional)
1 tbsp freshly chopped dill (optional)
dill sprigs to garnish
triangles of wholemeal toast or vegetable sticks to serve

  • Remove any fine bones from the trout, place on a plate and break up into tiny pieces.
  • Place the cream cheese in a small bowl together with 1 tablespoon of the lemon juice and beat with a wooden spoon until soft and creamy.
  • Add the pepper to taste, the dill and stir then mix in the trout, adding the extra lemon juice if required to give a spreading consistency. Spoon into a small serving dish and chill for 30 minutes. Store covered tightly with non pvc cling wrap in the refrigerator for up to 2 days.

Cooks tip - For adults, add 1-2 teaspoon of creamed horseradish to the dip. Smoked salmon can be used in place of the trout. Blend the ingredients together in the blender for 1-2 minutes.
