Figs with goat‛s cheese, pecans and honey-balsamic dressing

Fresh figs

This month I offer you this incredibly stylish, sophisticated starter. Made from fresh, seasonal ingredients it tastes divine, looks fabulous and takes minutes to make. As if all that wasn't enough each serving is only 138 calories too! What more could you possibly ask for!

Serves 4

Preparation: 4-5 minutes

20g pecans, roughly chopped
4 figs
1 x 100g soft rinded goat's cheese (Camembert type)
sea salt and freshly ground black pepper
2 tablespoons balsamic vinegar
1 tablespoons honey
1 teaspoon grain mustard
75g baby leaf salad

Preheat the grill to a high setting. Spread the pecan nuts out on a baking tray and toast under the grill for 1 ¬Ω-2 minutes, keeping a close eye on the nuts to make sure that they don't burn. Transfer to a bowl.

Cut the figs in half through the stalk and place on the baking tray. Cut the goats cheese into eight pieces and place one on each fig half. Season, then pop under the grill for about 2 minutes until the cheese is golden and bubbling.

Whisk the balsamic vinegar together with the honey, mustard and seasoning to make a dressing, then divide the salad leaves between four plates.

Place two fig halves on each plate, scatter the pecans on top and drizzle with the dressing. Serve immediately.
